Healthy Eating for Toddlers

ZANY ZUCCHINI BROWNIES


Doesn't this recipe sound......zany??? It is so delicious, you wouldn't even believe that you were eating Zucchini! This is a perfect desert dish to make, especially if your toddlers have a problem eating their veggies (which mine don't). We made these brownies for the first time today, and we had so much fun! Charlotte received an adorable baking kit from my dear dear friend Jennifer for Christmas and we have been drooling over all the recipes it came with, and this was one of them. I highly recommend you try these.

Ingredients

1/4 cup butter softened
1/4 cup canola oil
1 cup sugar
1 large egg
3/4 teaspoon vanilla
1/3 cup buttermilk
1 1/3 cup flour
2 1/2 tablespoons cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups grated zucchini
1 teaspoon cinnamon

Go ahead and grate your zucchini and put it off to the side
Pre-heat oven to 325
grease baking pan (use a 8inch by 8inch)

Grab two bowls.
In first bowl add butter, oil, and sugar and stir till well blended. Then, stir in the egg, vanilla, and buttermilk.

In the other bowl, stir together flour, cocoa powder, baking soda, cinnamon and salt.

Add the flour mixture to the butter mixture, and stir well. Then, add your grated zucchini to the batter and mix, and pour into baking dish.

Cook for 30-40 (I had to cook mine for 50) minutes until center is done.

Wa-la! You have your nutritious, delicious Zany Zucchini Brownies. (I serve these still warm with a side helping of Greek Gods honey flavored greek yogurt.)
